I found that it's near impossible to install Ubuntu 7.10 under Virtual Server 2005 R2 SP1, it keeps coming up with the "can't mount CD-ROM" error during the hardware detecting for install. Even using the kernel option ide=nodma (which worked for installs on ancient computers with old CD-ROM's) doesn't fix it.
I did however come across a good reference for installing Fedora 8 on Virtual PC, I'm seeing how well it translates to Virtual Server.
